Stuffing-Coated Baked Chicken
Tasty, moist, delicious. Quite probably the best baked chicken ever.

boneless chicken breast halves or thights

cup
sour cream

tablespoon
fresh lemon
or lime for a fun twist juice

teaspoon
soy sauce
low sodium for less salt

teaspoon
garlic powder

dash pepper

ounce
package of stuffing mix
crushed into crumbs

cup
butter
melted (optional)

Preheat oven to 375F.

Lightly grease baking dish with cooking spray or butter.

In a medium bowl, mix the sour cream, lemon juice, soy sauce, garlic powder, and pepper.

Place chicken in bowl and mix until coated. Let marinate for 5-10 minutes.

Put the crushed stuffing mix into a shallow dish or plate.

Coat both sides of the chicken with the stuffing mix. Feel free to smoosh the chicken a little to get a nice coating.

Arrange the chicken in the baking dish and drizzle with melted butter (or spray the tops with cooking spray.)

Bake 40-59 minutes, until the chicken is no longer pink and the juices run clear.
